Lettuce is often known as the base for so many spring salad recipes, as well as a popular topping for burgers and sandwiches. But more often than not, people wind up using the same romaine lettuce over and over again. And while there's nothing wrong with crunchy romaine, there's a whole world of other salad greens just waiting to be eaten! Whether you’re after something crisp and refreshing or bold and peppery, the flavor and texture of your salad can be totally transformed based on what type of lettuce you choose. Just take a look at the produce section of the supermarket or your local farmer's market and you’ll find tons of varieties of lettuce in all shapes, sizes, and colors. Once you find a new favorite, you can start experimenting with some brand new salads your family will love.

When it comes to different types of lettuce, there are two main categories to keep in mind. Susannah Ball, product development manager at PanAmerican Seed, explains that leaves that form a head as they grow are called heading lettuces, while those that grow freely are called looseleaf. "Romaines, icebergs, butterheads, and oakleafs are all the same plant—lettuce," Susannah says. "However, there are tons of other leafy greens that we tend to eat and cook with in the same way." Here, you'll all those lettuces and more, including arugula, kale, endive, and other leafy greens that we typically find in salad mixes (even if they're not all technically lettuces). Some lettuces will be great for side salads, while others are better for tossing with hearty mix-ins. There are even lettuces that can be turned into lettuce wraps or tossed into pasta salads.

Arugula
